EVOO Pancakes or Waffles

INGREDIENTS

  • 1 & 1/2 cups flour 
  • 3 & 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 Tablespoon sugar
  • 1 & 1/4 cups milk
  • 1 egg (or 3 Tablespoons of egg substitute for vegan)
  • 1 teaspoon vanilla extract
  • 2 Tablespoon Rastrello Extra Virgin Olive Oil (EVOO)

 

PREPARATION

  1. Combine flour, baking power, soda, salt and sugar.  Make a well in the center and pour in milk, egg, EVOO and vanilla.  Mix until smooth.
  2. Heat a lightly oiled griddle or waffle iron and pour about 1/4 cup per pancake/waffle.  Griddle until brown on both sides.
