Guacamole

INGREDIENTS

  • 3 ripe avocados, peeled & pitted
  • 1 jalapeño, cored & finely diced
  • 1/2 cup finely diced red onion
  • 1 Tablespoon fresh lime juice
  • 1/3 cup fresh cilantro leaves, finely chopped
  • 1/2 teaspoon salt (or more if needed)
  • 1 small tomato, cored and chopped
  • 1 Tablespoon Rastrello Extra Virgin Olive Oil (EVOO)

 

PREPARATION

  1. Mash the avocados in a medium sized bowl
  2. Add jalapeño, onion, lime juice, cilantro, salt, EVOO and tomato
  3. Mix thoroughly
  4. Serve immediately
