Guacamole
INGREDIENTS
- 3 ripe avocados, peeled & pitted
- 1 jalapeño, cored & finely diced
- 1/2 cup finely diced red onion
- 1 Tablespoon fresh lime juice
- 1/3 cup fresh cilantro leaves, finely chopped
- 1/2 teaspoon salt (or more if needed)
- 1 small tomato, cored and chopped
- 1 Tablespoon Rastrello Extra Virgin Olive Oil (EVOO)
PREPARATION
- Mash the avocados in a medium sized bowl
- Add jalapeño, onion, lime juice, cilantro, salt, EVOO and tomato
- Mix thoroughly
- Serve immediately
