Olive Oil Oven Fried Chicken
INGREDIENTS
- 4 pounds bone in chicken parts with skin
- 1/2 cup all-purpose flour
- 2 teaspoons smoked paprika
- 2 teaspoons kosher salt
- 1 teaspoon white pepper
- 1 teaspoon granulated garlic
- 1/2 cup Rastrello Extra Virgin Olive Oil (EVOO)
PREPARATION
- Preheat oven to 425 degrees Fahrenheit
- Season the chicken pieces with kosher salt
- In a large bowl, or zip top bag, mix together the dry ingredients
- Pour 1/2 cup of EVOO in the bottom of a sheet pan
- Coat the chicken in the flour mixture one piece at a time
- Put the coated chicken pieces on the sheet pan, skin side down
- Put chicken in oven and bake for 30 minutes, turning 1/2 way through
- Use thermometer to test to make sure the chicken is cooked through (at least 165 degrees Fahrenheit)
- Sprinkle with salt
