Tomato Bruschetta
INGREDIENTS
- 4 slices of good quality plain bread
- Rastrello Extra Virgin Olive Oil (EVOO)
- 2 garlic cloves (peeled)
- A handful of cherry tomatoes (chopped in quarters) · Salt & pepper for seasoning
- A few leaves of fresh basil (chopped)
PREPARATION
- Toss the tomatoes together with 2 tablespoons of EVOO, a pinch of salt and pepper, and basil.
- Toast your bread and rub the garlic cloves directly on the toasted bread.
- Drizzle with EVOO; sprinkle with a bit more salt; and add the tomato mixture.
