Yuca Oven Fries

INGREDIENTS

  • 2 large yucas
  • 1 tablespoon of Rastrello Extra Virgin Olive Oil (EVOO)
  • 1/2 teaspoon chili powder
  • 1 teaspoon sea salt
  • Freshly ground black pepper, to taste

 

PREPARATION

  1. Preheat oven to 450 degrees F.
  2. Peel yucas with a vegetable peeler to remove waxy skin.
  3. Chop in half and then slice each half into fry-shapes.
  4. Place sliced yuca into a large pot and fill with water.
  5. Heat on stovetop until water comes to a boil. Let cook in boiling water for 8-10 minutes.
  6. Strain yuca from water and rinse with cold water.
  7. Place yuca in a large bowl and top with EVOO.
  8. Sprinkle with chili powder, salt, pepper and lightly toss to coat.
  9. Line onto a baking sheet (do not overcrowd) and bake for 15 minutes.
