Sapore Italiano - Traditional Balsamic Affinato (aged 12 years)
This is traditional balsamic vinegar of Modena, which represents the highest tier of Italian craftsmanship. It is produced from the must of Modena grapes from the historic estates of Emilia-Romagna. They are cooked over an open fire and then undergo a long process of fermentation and oxidation, thanks to the annual refilling ("rincalzi") through a series of wooden barrels. This continuous process results in a small yearly quantity of finished product after no less than 12 years of barrel activity.
This product is bottled only after the expert tasters’ approval and guarantee of quality and originality. After passing this strict test, it is bottled and marketed as “Denominazione di Origine Protetta”—DOP in Italian for Protected Designation of Origin.
